Arancine

Ingredients:

For 4 people: 400 grams of rice, 1/2 teaspoon of saffron, 150 grams minced beef, 1/2 peeled tomatoes, 100 grams of shelled peas, 6 eggs, 75 grams of fresh cheese, salt and pepper, olive oil are seeds for frying 100 grams of butter, 1/2 onion, 300 grams of flour, 300 grams bread.

Preparation:

Sauce: In a pan put to fry the chopped onion, add the meat, a little salt and pepper, peeled tomatoes and cook over low heat econ cover. Once cooked mix the peas with meat sauce.

Now boil the rice and drain it al dente. Mix with saffron, 3 lightly beaten eggs, 50 grams of butter and let cool. Blanch the peas, drain and sautÚ in the remaining butter.

Take some dough made with rice ball and make a hole in the center so you can put some stuffing a cube of cheese fresh and close reforming a smooth batter.

Go arancine in flour, then in beaten eggs with salt, then in the crumb. Fry in plenty of oil.
