Pasta a picchio pacchio


For 4 people:

  • 500 grams of pasta daisy
  • 1 kg. ripe tomatoes
  • 1/2 onion
  • 1 clove of garlic
  • 1 bunch of basil
  • olive oil
  • salt and pepper.

Blanch the tomatoes, peel, remove seeds and set aside the juice.

In a saute pan with oil the sliced onion with a clove of garlic.

Add the tomatoes cut into chunks, leaving flavor and stretch with the tomato juice that you had put aside.

Season with salt, pepper and basil into small pieces and cook for 6/8 minutes over medium heat.

In a saucepan bring water to boil, add salt and drop the pasta.

Just cooked al dente and season it with the sauce and fresh basil.
