For 6 people:

  • 500 gr. chickpea flour
  • 2 bunches parsley
  • 150 gr. grated Parmesan cheese
  • 1 liter of oil for frying
  • salt.




Take a pan, pour a liter of water and put it on low heat.

Combine the chickpea flour, salt, and stir constantly until a thick dough that comes away from the pan.

Turn off the heat and add the parsley, then pour the mixture onto a marble wet cloth and spread it with a spatula to obtain a uniform surface of about three millimeters thick.

Let cool and cut into rectangles.

Heat plenty of oil in a pan and then dip 5-6 fritters at a time.

Wait until they are golden brown, drain and placing them in a paper towel. Serve hot with salt, pepper and lemon.
