Cut the eggplant into cubes and fry in abundant oil after keeping them about an hour in salted water. Prepare a tomato sauce with garlic and basil.
Fry separately the peppers cut into strips with sliced onions and just wilted, in the remaining oil in a frying pan, sautÚ the olives, capers and chopped celery.
Pour the sauce ready aubergines, peppers and onions, celery, olives and capers, cook a few minutes over low heat and pour in the vinegar. Correct salt and pepper and serve cold.
