Zuppa di cotenne e fave (Pork rind and broad beans soup)

Ingredients:

  • Dried broad beans gr. 500
  • pork rind gr. 300
  • salt
  • pepper.

Pork rind and broad beans soup

 

Preparation:

Immerse broad beans, previously topped, in salty water for a night.

Slice rind thinly and put in a pan with broad beans.

Cover with water and cook on a low flame for about two hours.

Add salt and pepper and serve hot.
