Carciofi alla villanella dell'Ennese (Artichokes in Enna way)

Ingredients:

  • 6 artichokes
  • a small onion
  • 6 or 7 garlic cloves
  • grated pecorino cheese
  • parsley
  • olive oil
  • salt and pepper.

Artichokes in Enna way

Preparation:

Slice garlic and onion thinly and mix them with chopped parsley, grated cheese, salt and pepper.

Clean artichokes, cut the top and bang them upside-down on a marble surface to open the core.

Put the stuffing inside and put in a pan. Half cover with water and cook on a moderate flame for about 30 minutes.

When soft, turn the flame off and pour very little oil on top of each.
