Sformato di melenzane (Aubergine pie)


For 4 people: 2 aubergines, 1 onion, 1 garlic clove, 400 gr. tomatoes, basil, 700 gr. potatoes, 200 gr. mozzarella cheese, 1 knob butter, salt, pepper, extra virgin olive oil.

Slice aubergines but leave peel, put in a bowl, add salt and some weight on top and leave half an hour (they will let the bitter juice out).  


Dry them with some food paper. Brown aubergines in hot oil (3 tablespoons).

Apart in another pan brown thinly sliced onions, pressed garlic clove (take it out when brown) and add tomatoes previously washed and cubed. Cook for about 45 minutes on a low flame.

When ready sieve, add salt and pepper and chopped basil.

Peel and slice potatoes, boil in salty water for 5 minutes and drain. Slice mozzarella, previously drained. Butter a tin and alternate aubergines, potatoes, mozzarella and tomato sauce.

Top with sauce and mozzarella. Cook in pre-heated oven (200) for 40 minutes. Serve hot with some fresh basil on top.
