Aggrassatu (Glazed meat)


For 4 people:

  • 600 gr. Girello (meat)
  • 3 white onions
  • 3 peeled tomatoes
  • 1 cup white wine
  • salt and pepper
  • extra virgin olive oil.



Slice onions thinly and brown in little oil with meat. Add wine and let evaporate.

Add peeled tomatoes in cubes, add salt and pepper and cover the pan.

Cook on a moderate flame for a hour and half, adding water now and again.

When meat is ready, take it out and sieve the sauce.

Slice the meat and place on a dish. Pour the sauce on top.

You can use the sauce also to dress pasta.
