Zuppa di cotenne e giri (Pork rind and giri soup)  

 

Ingredients:  

  • Pork rind gr. 300
  • 4 bunches giri (local vegetable)
  • salt
  • pepper.

Pork rind and giri soup  

 

Preparation:

Chop rind and boil in water for about 30 minutes.

When cooked, put in the same broth chopped vegetable.

When ready add salt and pepper.

The soup should be hot and eaten with stale bread softened in water.
