For 8 people: 500 gr. rice, 20 gr., yeast, 1 grated lemon peel, 50 gr. icing sugar, 10 gr. cinnamon, some water, olive oil.
Cook rice until well soft. Drain, let it cool down and sieve.
Add yeast, some warm water and lemon peel to this cream. Mix well and add some flour until stiff.
Place on a marble surface, previously greased with oil, and level it, 1 cm thick.
Make some small rectangles and let them leaven. Now deep fry in olive oil until golden.
Place them on some blotting paper to eliminate the exceeding oil.
Put on a dish, dust with icing sugar and cinnamon. Serve and enjoy.
