Cut the lamb into large pieces and place it in a pan passing the first in a mixture of olive oil, salt and pepper.
Add olives, cover each piece with grated pecorino cheese and spent a very hot oven for about an hour and a half, basting occasionally with a few tablespoons of broth.
When cooked, pour a glass of red wine over the lamb dry and put in the oven to soften.
