Provola cheese of Nebrodi Provola cheese of Nebrodi

The provola of Nebrodi is original from Floresta zone and afterwards it was diffused in the neighbouring areas.

It is a cheese with a spun paste, famous for its dimension of 4-5 kilograms and it is moreover the only provola cheese to be seasoned.

It has got a particular shape lengthened as a pear surmounted by a short neck with a ball head.

The thin light-yellow crust verges to amber-yellow in its maturing period and it is soft and compact. Its taste is sweet and delicate tending to spicy.

The salting process takes place in saturated pickle.

It needs a maturing period of at least 10 days for the fresh cheese, 3-4 months for the semiseasoned one, more than 5 months for the seasoned one.

The maturing takes place in traditional premises with thick walls which make the cheese very fresh, the cheese is hung on a perch for all the maturing period.
