The pastry


Flour gr. 500, pork fat (lard) gr. 200 gr or suet. And butter 100 gr. 100, 2 tablespoons sugar, 1 cup white wine, 1 egg and a yolk, a pinch of salt.

The pastry  


Place the flour on a marble table, leaving a hollow in the center, where you will pour the eggs, sugar, salt, lard and wine.

Knead until the ingredients are well blended with each other, but not beyond, and let the dough rest for a few hours.

Divide it into two parts, flatten with a rolling pin into round discs are not too thin.

Lined with one of them the bottom and sides of a well greased baking dish diameter of about cm. 28, and let the second disc, to close up the mess once filling.
