Lacerto kg. About 1,200, 4 large onions, suet gr. 200, a glass of white wine, salt, pepper, a sprig of rosemary

Tie the chunk of meat with string, accentuating the shape roulade and place in pan, covered for three quarts of water, with the sliced, onion, flare fat, rosemary, salt and pepper.

Let simmer for about an hour, then add the wine. When, after about another hour, the fragment will be entered in cooking, raise the heat and allow to thicken the sauce while browning the meat.

If the water was still a lot you can remove a page from the pouring it back into the saucepan as the meat browns.

When cooked, remove from heat, let cool completely and cut the fragment into thin slices.

Heated in the cooking sauce before serving with potatoes, mashed potatoes or vegetables.
