For 6 people: 1 pound of small octopus, 400 grams of peeled tomatoes, 1/2 onion, a clove of garlic, a small bunch parsley, 1/2 glass of white wine, extra virgin olive oil, salt and pepper to taste
Clean and cleanse the small octopus and let them drain in a pan. Fry the finely chopped onion and whole garlic. Pour the chopped tomatoes salt and cook.
Add the octopus, add the glass of wine and let it evaporate. Then cook over medium heat and cover pan for about 20 minutes, stirring occasionally.
Two minutes before descending from the heat, sprinkle with plenty of parsley and a little pepper. Serve them hot, seasoned with their sauce.
