Vermicelli alla Siciliana

Ingredients:

For 4 people: 600 grams of noodles, 500 grams of tomatoes, 1 eggplant, 2 peppers, 2 cloves of garlic, 2 black olives, capers 20 grams, 10 leaves of basil, 3 anchovies, salt and pepper to taste, olive oil.

Vermicelli alla Siciliana  

Preparation:

Chop the tomatoes peeled and diced eggplant. Roast the peppers, remove the skin and slice finely.

In a pan fry with olive oil tomatoes, eggplant, peppers, pitted olives, capers, chopped anchovies and liscate, the whole garlic cloves (Remember to take out).

Add the basil and a little salt and cook, covering, for about twenty minutes on low heat.

Boil the noodles in salted water, drain it al dente and toss. Sprinkle with pepper and serve.
