Almond paste

Ingredients:

For 4 people: 800 grams of sugar, 3 glasses of water, 800 grams of almond flour, 100 grams of flour mallorca, 1/2 teaspoon of vanilla, various dyes for food.

Preparation:

Melt over low heat sugar with three glasses of water. Wait until it starts to spin: you'll know when a few drops of melted sugar, drained from a wooden spoon, will grow flush.

Then remove the pan from the heat. Add the ground almonds, flour mallorca, vanilla and mix until the dough comes away from the pan all at once.

Pour the dough on a marble table wet. As soon as it has cooled, knead with your hands for a long time.

When it is compact and smooth, place it in the mold the desired shape. Decorated finally, at your leisure, with food colorings.
