Braciolone of rind

Ingredients:

Rinds kg. 1 minced pork gr. 300 gr minced beef. 300, 2 eggs, grated cheese gr. 500, a small bunch parsley, garlic clove, tomato extract gr. 300, an onion, a bay leaf, salt, pepper (the dose is 9 or 10 people).

Braciolone of rind

Preparation:

Let the butcher cut a nice square rind of a pound. Clean it well and burned any hair.

In a bowl, mix together the minced meat with eggs, cheese, parsley and garlic, a pinch of salt and pepper.

Arrange the mixture on slice of rind, wrap it around into a roll and tied with string.

Meanwhile Fry in a pan with a little olive oil, sliced onion, melt the extract and long with about a liter of water.

Put in a pan also braciolone, a bay leaf and simmer for an hour and a half.

Check the cooking, remove the meat from the pan and slice it cold. Serve covered with hot sauce.
