Ingredients: Laundry or maccheroncino gr. 600, a broccoli (cauliflower) of about kg. 1, 4 salted anchovies, raisins and pine nuts gr. 50, a sachet saffron (or a knob of extract), a small onion, oil, salt and pepper.
Preparation: Boil the broccoli, cut into ribbons, pull it out of the pot with a spatula with holes and stored water for cooking the dough. Fry the grated onion in a pan with plenty of oil, add the saffron dissolved in a tablespoon of warm water (or coconut extract), the raisins and pine nuts, leave them aside and pour in the pan that will have even the broccoli stir-fry over high heat. Season with salt and pepper, softened the mixture with a ladle of cooking water from the vegetables, and cook for five minutes over medium heat. Stir in the anchovies have dissolved in the oil and remove from heat. Boil the pasta in the broccoli al dente, toss in a bowl with the sauce ready, and let it sit for about 10 minutes before serving.
