Provola cheese of Madonie
Typical stringy paste cheese produced in the Madonie.
The Provola cheese of Madonie is still produced in handicraft way from the expert hands of local dairymen which hand on this ancient techniques from father to son.
It has got a small size, about 1 Kg., and it has got a shape of a pot-bellied flask.
The crust is smooth, thin and of yellow-straw colour.
The paste is white tending to yellow-straw colour, it is soft and compact. Its taste is sweet and delicate.
The maturing, of about 10-15 days, takes place in cool airy traditional premises where the cheese is hung at "horse" of a perch for all the period.
