Flour gr. 500, suet gr. 100, salt and enough warm water. For the filling: fresh ricotta gr. 400, fresh cheese gr. 100, mortadella or salami gr. 100, salt and pepper.



Mix the flour with the lard, salt and a few sips of warm water.

Let the dough rest.

In a bowl the ricotta with a fork and reduce it in cream, adding, if necessary, a little bit of warm water.

Season with salt, pepper, diced cheese, mortadella (or salami) into small pieces.

With a rolling pin pull the thin leaves of dough and close to the edge, at a distance of about cm. 5 from each other, stuff heaped teaspoons of curd well.

Turned over the dough on itself, so that the dressing remains inside and cut with the appropriate wheel of small crescents.

Pressed the edges with your fingers and go to fry in a pan with hot oil. Serve hot.
