Parmigiana

Ingredients:

8 medium eggplant, ripe tomato kg. 1, 2 onions, parmesan gr. 100, a small bunch basil, oil, salt.

Preparation:

Cut the eggplant into slices about half a centimeter thick, put them to rest for a few hours in salted water, drain and fry them in a pan in the oil plentiful and hot.

Meanwhile prepare a tomato sauce, in the usual way, with onions, tomatoes and basil.

As soon as you have everything ready, pour in the bottom of a baking dish a few tablespoons of sauce and alternating layers of eggplant covered with sauce, grated parmesan cheese and basil leaves.

Cover with a layer of sauce and Parmesan cheese and bake for about twenty minutes. Serve warm.
