Clean up the artichokes, removing their upper part and the tough outer leaves, cut into wedges (or better into thin slices), starting from the stem toward the top, and leave them in water with lemon.
Prepare the batter in a bowl dissolving the yeast in warm water and incorporating it into the flour, with the addition of more water to make the mixture soft and loose.
Season with a pinch of salt and let rise in a sheltered place for about an hour.
Spend the artichokes in batter and fry in a pan with hot oil.
