Tonno a la stemperata (Tuna fish in vinegar)


  • Sliced tuna fish kg. 1
  • green olives gr. 200
  • capers gr. 50
  • raisins gr. 50
  • some celery
  • 4 garlic cloves
  • half glass vinegar
  • olive oil, salt, pepper.

Tuna fish in vinegar


Brown the tuna fish in a pan.

In the olive oil left in the pan, brown garlic and celery both chopped.

Add stoned olives, capers and the raisins.

Cook for a while, put the fish back in the pan and add some vinegar.

Season with salt and pepper, cook for few minutes more, place the fish on a dish and serve cold.
