Costate di maiale ripiene (Stuffed pork chops)


Pork chops 6, minced pork meat gr. 200, pork liver gr. 200, salami gr. 50, fresh caciocavallo cheese gr. 100, hard-boiled eggs 2, onion 1, a cup of red wine, olive oil, salt, pepper.

Stuffed pork chops


The chops should be quite thick and open like a book. The bone should not be cut off.

Prepare a mix with minced meat, chopped liver, salt, a lot of pepper and few drops of red wine.

Put a spoon of this mixture between the two parts of a single chop, along with fresh cheese, hard-boiled eggs and salami (all chopped).

Close the chop and join the two parts together to prevent the stuffing to pour out.

Brown the grated onion in a pan with olive oil, add the chops, pour some wine and cover with the broth. Cover and cook for about a hour.

Serve with rice dressed with meat sauce, chopped liver and vinegar (the latter with two tablespoons of sugar). Place on a dish and serve cold.
