Bovine race: the "modican" race
The "modican" race is a race of sicilian origin and diffused in Modica, in province of Ragusa.
Although this race represented one of the most diffused in Sicily, it has endured a important reduction in the course of the years.
The "modican" race has a coat colour red-wine with black shadings on its head. Its horns are yellowish in the base and black in the tip.
This race has been considered as one of the best bovine race with a triple attitude.
As a metter of fact it can survive to the torrid Mediterranean summers, feeding itself mostly to the pasture, in natural state all the year and in the stables just for the milking.
The milk, produced only in the period of breast-feeding, is the ideal raw material for the most valuable sicilian cheeses such as the ragusan and the caciocavallo cheese.
The natural breeding guarantees also the highest quality and healthiness of the meats.
