Le 'mpanate siracusane (The Siracusan pie)

Ingredients:

For the pastry: Superfine flour kg. 1, yeast gr. 50, a teaspoon of baking powder, half a cup of olive oil, a pinch of salt.

For the filling: Sparacelli (a local vegetable) kg. 1, pork sausage gr. 300, primosale cheese gr. 200, olive oil, salt, Cayenne pepper.

The Siracusan pie

Preparation:

Wash vegetable and cook shortly in salty water. Drain and add chopped raw sausage, pepper, very little oil. Fill the pie, add primosale cheese in slices, seal the top and bake for about thirty minutes.

For the filling:

Potatoes kg. 1, red tomatoes gr. 500, onions 2, salt, pepper, olive oil.

Preparation:

Slice onions and brown. Add peeled tomatoes (no seeds) and potatoes in thick slices. Cover and cook for about ten minutes. When ready, place potatoes in the tin where you have previously rolled the pastry out. Put the top and seal. Bake in hot oven.

For the filling:

4 bundles of giri (local vegetable), dry tomatoes (or in oil) 5 or 6, olive oil, salt, Cayenne pepper.

Preparation:

Chop raw giri and dress with olive oil, pepper and place on pastry adding tomatoes. Bake in hot oven.
