Olive a la stemperata (Olives in vinegar)

Ingredients:

  • Large green olives gr. 400
  • 2 cloves of garlic
  • capers gr. 50
  • some mint
  • 2 big boiled carrots
  • 4 artichoke cores
  • half a cup of vinegar.

Olives in vinegar  

Preparation:

In a pan brown stoned olives, garlic, capers, mint, chopped carrots and artichoke cores in olive oil.

Add salt, pepper and vinegar. Cook for a while and serve well cold.
