A chicken, rice gr. 600, sausage gr. 200, onion 1, ripe tomatoes 4, eggs 6, a bunch of parsley, grated pecorino (or caciocavallo) cheese gr. 50, fresh cheese gr. 100, olive oil, salt, black pepper.
Boil rice in salty water and drain "al dente". In a pan, brown in oil sliced onion, peeled tomatoes, giblets (washed and chopped), chopped sausage, salt, black pepper and chopped parsley.
Cook for about ten minutes, add rice, 4 beaten eggs, 2 chopped hard boiled eggs, grated cheese, and fresh cheese in cubes.
Bone chicken, stuff with rice, seal well and cook in salty water with herbs. If you are using a free-range chicken you'll need two hours, otherwise 30 minutes.
