For 4 people: 1 kg of broccoli, 150 gr of fine ground flour, 10 gr yeast, 20 gr butter, 2 eggs, salt and pepper, 1 litre of seed oil (for frying).
Chop broccoli in regular pieces and cook in slightly salty water.
Apart, prepare some batter: mix together flour, yeast previously dissolved in a cup of warm water, and melted butter. Add a pinch of salt and an egg.
Let the dough stand for few minutes and then mix energetically.
Cover with a cloth and let leaven for about an hour. Add the egg white previously whisked stiff.
Put a pan with half litre oil on the flame. When hot, fork a piece of broccoli, dip in the dough and then fry.
Fry until golden. Place on a dish with a tissue to eliminate the exceeding oil.
Serve hot. You can also fry artichokes and cardoons.
