The Almond of Noto The Almond of Noto

A white cloud, the effect of the almond tree in flower in January and February in the most provinces of Siracusa.

The hills of Noto possess ancient cultivations of almond trees that offer a product of highest quality, sweet perfumed and aromatic fruits.

In the almond grove of Noto, between July and August, the peasants beat the branches with very long canes and then they collect the almonds in large lengths of material.

The almonds collected, are parted from the husk that wraps them, separating in this way the almonds, which are laid in order to dry.

The varieties cultivated in Noto are three: "Roman", "Pizzuta d'Avola" and "Fascionello". The "Roman" is the best for its intense and aromatic taste and for its white-pink color, but it isn't very commercialized because of their irregular squat shape. The "Pizzuta d' Avola" is the most elegant among all almonds, incomparable for its shape and taste. The "Fascionello" is like the "Pizzuta" one for its shape, but it is "vigorous" like the Roman.

All of them have got a woody and compact shell, a coat that keeps the fats, preserving the taste and the scent of the almonds for long time.
