The kind of goods are: vegetables, mushrooms, egg-plant "caponata" (fried egg-plants with tomato sauce, capers, onions, olives, celery and vinegar), spicy hot peppers, olives, hors-d'oeuvres, country artichokes, country onions, tomato spread, salted capers, tuna fillets in olive oil, mackerel fillets in olive oil, mullet roe, mackerel paté in olive oil.

The technological process is: artisan manufacture anhancing the natural taste of the produce without preservatives, dyes or flavour enhancers. Only extra virgin olive oil is used.

The kind of goods are: mackerel and tuna fillets in oil or in brine

The annual production is: 300 tons.

The technological process is: once the heads have been cut off, tuna fishes and mackerels need to be rinsed in running water to remove all blood. Then they are cooked in salted water (stream cooking is not recommended) at a temperaturre of 100 degrees. At this temperature they preserve their vitamin conten.
Then the fish is hand gutted and then arranged in alluminium, tinplate cans or in glass jars which are then filled with olive oil, seed oil or salted water.

Further information on the business: it has been set up in 1929. The fish is washed by hand without caustic soda or hydrochloric acid. Nor preservatives or flavour enhancers are used. All this guarantees a high quality product.
