1 wild rabbit, a small onion, 2 carrots, green olives gr. 200, capers gr. 50, a small bunch celery, ripe tomato (or peeled) gr. 500, 1/2 cup vinegar, two tablespoons sugar, oil, salt and pepper.
Cut the rabbit into pieces, wash, dry and fry in a pan with a little oil.
Saute the onion in a pan with oil, carrots and sliced celery.
Let cook for few minutes then add the pitted olives, capers and tomato peeled and seeded.
Switch to pan even the rabbit season with salt and pepper and cook over low heat for about thirty minutes.
When cooked, pour in the vinegar in which you have dissolved two tablespoons of sugar.
Pour onto a serving plate and serve cold.
