Raw tuna


Tuna slices kg. About 1, a white onion, capers gr. 50, a small bunch celery, vinegar gr. l50, lemon juice gr. 40, oregano, salt, pepper and olive oil.

Cut the tuna into slices as thin as possible and place in a bowl to marinate for 24 hours in the raw and lemon juice and vinegar.

The ratio between vinegar and lemon must be 70% vinegar and 30% of lemon.

The tuna slices have to be covered by the juice.

Season with the onion into thin slices, capers, chopped celery, parsley and a few hours later that you have kept the tuna infusion, add a pinch of oregano.

Just before serving, remove the slices from the marinade and arrange on a serving platter, drizzle with some oil, a pinch of salt and pepper, the flavors of the marinade without the lemon juice and vinegar.
