Tuna roe "bottarga" (botargo) of Favignana
The background of the island of Favignana, when you arrive at the harbour, is dominated by an ancient construction: a light pink color building, made by sixth acute arches and by high and thin towers.
They are the old tuna plants, which were in order until Fifties.
From centuries the sea of the Egadi islands has been the preferred reproduction place for the tuna, than during their migration comes very close to the Sicilian coasts and from whose roes an exquisite product is obtained: the "bottarga" (botargo).
The working of the tuna bottarga has very ancient roots. The handicraft production of the bottarga consists of five stages: the salting, the pressing, the washing, the drying and finally the seasoning of the roe.
After salting the tuna roe bag is pressed so to give it a tear drop like shape. The bottarga is then washed, accurately dried and finally seasoned in fresh and ventilates rooms, so to obtain a totally biological product, with no conserving or coloring added, a product unique for its quality and characterized by an inimitable and unforgettable taste.
